Which versions are you looking for? The Thinkway Toy Story Collection versions or the Mattel Deluxe versions?
Myer appears to still have limited stock of the Thinkway Toy Story Collection Woody, Buzz and Jessie. If you ask nicely enough, Myer staff will check stock levels in other stores and if you pay the shipping, they will also ship items from another store to your “local” store.
Toys R Us also initially received stock of the Thinkway Toy Story Collection figures, but it’s been a while since I’ve been to a TRU, so I don’t know whether they would have any stock left. Target and K-Mart also received stock of the Thinkway Toy Story Collection figures in June/July 2010, but I’m fairly certain they’re completely sold out.
There are also a couple of online Australian retailers like playdex.com.au, toymadness.com.au, bibyco.com.au, yogee.com.au, etc who may have stock, but it’s doubtful any of them would still have both.

If you’re after the Mattel Deluxe versions (which appear almost identical to the Thinkway Toy Story Collection versions, but different packaging and less detailed), then I’ve most commonly seen those at Big W. Similarly to Myer, if you ask nicely and if you pay the shipping, I’ve found that Big W will transfer items between stores for customers. I’ve also see the Mattel Deluxe versions at pretty much all other stores - K-Mart, Target, TRU, Myer, David Jones, etc. You can also try Mr Toys Toyworld as they received stock of the Mattel Deluxe versions.
Mattel Deluxe Woody (but not Mattel Deluxe Buzz) also seems to be available from online Australian retailers:

If you’re after the Mattel Deluxe ineractive two-pack with Woody and Buzz, I’ve only seen that for sale at Toys R Us.

If you particularly want the Thinkway Toy Story Collection versions and cannot find them in Australia, I’ve purchased from forum member “Slink” and I haven’t had any problems.
I got Mattel versions of Woody and Buzz from Big W when TS3 opened, but they’ve only been restocking Buzz lately.
When I found out about the TSC I got Woody and Buzz from Target, at separate times. They only seem to get a couple in at a time and don’t restock for a month or so though. :
I’ve seen Toy Story toys in K-mart and Myer, as well as some locally-run toy stores, although they seem to overcharge massively. (The Myer in Orange was selling Mr. Potato Head for $150 while the K-mart practically right across the road had him for $60 )
I’ve only seen Buzz, Woody and Jessie around recently. Big W is advertising Lotso in their catalogues but he never seems to restock in my local store, and there are a few Bucket-o-Soldiers floating around but other than them I’ve bought most of my collection online.
Big W currently has 50% off ALL Toy Story items, including Mattel’s deluxe figures, Lego, etc.

They’re so cheap, I’m even considering getting a Mattel “set” of Woody, Buzz and Jessie!
A heap of stuff is even more than 50% off - the U Command Buzz is only $40, when it first came out it was retailing for $200.
Could anyone be kind enough to get RC and send it to NZ by any chance?
I spotted TSC Buzz (original), Woody, Jessie, Lotso and Green Army Men in Myer today.
Myer currently have a toy sale (although I don’t think any of the TSC figures are on sale), so they may have gotten in extra stock. No sign of Rex, Potato Head or RC.
