I think so! I know I’ve seen it on TV before, but it was also released with the Wall-E DVD according to Google. I’m not sure if it was ever released alone, though.
Thanks, that’s strange - I have WALL-E on blu-ray (Region B) and on the back of the box it mentions The Pixar Story as being part of the DVD features (which are apparently on the second Blu-ray disc), yet I can’t find those features. Weird …
The Pixar Story is the only documentary that I know they’ve released, and it should be included on the second Wall-E disk. I remember getting it with my delux dvd set - or whatever it’s called. Not the single dvd, but not the blu-ray either.
But if you’re interested in something to read, The Pixar Touch by David Price is a good read, although it does take a while to get into things. For a “lighter” version, something that’s pratically equal to The Pixar Story’s book version, look up To Infinity and Beyond: The Story of Pixar Animation Studios. That was the first book I got about Pixar, and although it’s huge and text book like, there’s a ton of pictures, and it does a good job of scratching the surface. I like The Pixar Touch better though - content wise- because it goes way indepth on topics.

I second TWCS’ recommendation of The Pixar Touch. Sure, it’s not a movie, but it really does give a great insight on the formation and heyday of Pixar, and it’s really engaging. If you have a shorter attention span to read a book (like me!), get it on audiobook from Audible. That’s how I “read” it and I absolutely loved it.
Irongiant: Both go right up to the Disney acquisition of Pixar right after Cars is released.
Although, I really wish there were more on after that, but I assume in the future there will be more content released.

I have The Pixar Touch and it’s a revised issue that goes up to WALL-E . I got it from Amazon (UK) a few months back for about £10, so it’s a little pricey but I too really recommend it. David A Price has also done a blog that continues from where the book left off aswell.

As for documentaries, The Pixar Story on the 2-disc WALL-E DVD is the obvious one, but you know that BBC3 did an hour show called Pixar: 25 Magic Moments? I’ve seen it twice now, and they showed it during Christmas/New Year when BBC had like a Pixar season (I saw WALL-E, Finding Nemo, Cars and The Incredibles on the schedule at least, so I assume that was what they were doing.). If you have a look online, you might get lucky, but I’m not one to give out links to sites . It was quite interesting, although I knew pretty much everything it covered in fairness.

Just ordered my copy which has a print date of 2009, so am HOPING that it also goes up to WALL-E.
I’d recommend The Pixar Story, which can be found on the Special Edition of WALL-E. There’s a lot of detail about their history and movies.
