I can see Lightning being capable of cheating, especially since he was such a player at the beginning of the first movie. Of course, he was reformed by the end of the first movie, but it is always possible that he might be tempted by the younger Miatas. It would be ‘in-character’ for him, and not as shocking if say, Ramone cheated on Flo, or Mater cheated on Doreen, or whatever.
As for Mater hooking up with Sally (haha, ‘hook’, you know, Mater has a hook… oh, never mind), I view it as possible as well. Most romantic love develops out of deep friendship, and Mater has spent more time together with Sally compared to Lightning’s ‘flash in the pan’. You get to know more about someone after many years rather than over the course of a few days. So I felt that Mater and Sally would’ve been a more plausible pairing than the canon one.

Yeah, it was implied. I was kinda bummed they didn’t ‘declare their love’, but I’m glad that Pixar didn’t go the cliched route of ‘kiss at the iris close-out’.
I can’t recall if he referred to her “Miss Sally” in the second movie, I only said that he called her that in the first. And it is because it is a non-canon fanfic that I said it was “plausible” and not the “absolute truth”. I wouldn’t call it the “absolute truth” because it is non-canon, only a possible interpretation by a fan. But it is believable (ie plausible).
If someone say, wrote a fanfic about Ramone cheating on Flo and becoming a gay partner with Sarge, that wouldn’t make sense at all, because it is too ‘out of character’ for him. It is still possible (nothing ever’s impossible when it comes to relationships), but it’s implausible. It’s too ‘out there’. On the other hand, Mater, despite having a platonic relationship with Sally when we are first introduced to them, could plausibly be still having feelings for Sally. We didn’t know what happened before Cars. He could’ve tried dating her, but it didn’t work out. He magnanimously introduces Sally to Lightning and tries to get the couple hitched up, but we didn’t know whether he’s already dated her before. It could be possible that they could ‘rebound’ and become a couple again (and I’ve seen this happen with real-life couples).
There is no proof - but the absence of proof doesn’t mean that it doesn’t exist. If I don’t see a monster in front of me, doesn’t mean there isn’t one behind me. I could use a theological/religious example of God, but I won’t go there. Basically, there is proof that Lightning and Sally like each other at the end of the first movie (the near kiss, the Sh-Boom sequence, Lightning moving to R.S.). But just because he shows commitment doesn’t mean that he wouldn’t renege on it in the future. I could be committed to finishing my fanfic by sitting down, writing a few chapters, but I can never predict the future (maybe someone will call me, maybe my house will burn down or my computer explode). Likewise, at the time that fanfic was written, Cars 2 wasn’t in release yet, so fans were free to speculate ‘What Ifs?’
Of course, now that the sequel is out, we are pretty much 90% certain they are going steady, again by evidence of the Wheel Well dinner date. But until I see an actual character description on the official website saying Sally is “Lighning’s girlfriend” or vice-versa, everything is still up in the air. It is more of an implied theory based on observation of their behaviour together, but it is not a fact until they, say, have babies, or one of them says “I love you” to the other or they marry or whatever. Also, just because there is no evidence that supports a Mater/Sally pairing doesn’t mean that fanfic writers who support this ship are totally wrong (Again, I’d use the ‘Monster behind me’ or God as an example). Likewise, Violet x Syndrome, or Professor Z x Holley shippers, like Mater x Sally shippers, they just don’t have canon evidence to support their claims. But again, that doesn’t mean they’re wrong (or right).

One last plug. So most of you would know I’m extremely discontented with the story in Cars 2. So I’ve written a trilogy of one-shots which I’m planning to post up over the weekend (Friday, Saturday, Sunday) with my own take on events from the movie. Some of you might remember I lamented about how I would do a post-Tokyo-race scene between Lightning and Sally, or how I would write a moment where Holley pleads Mater not to risk his life, etc. So just keep a lookout on deviantART and fanfiction, and I’ll post the links on the Fanfiction board when I upload them.

but like I was saying though I understand if some of you think Lightning still has that Man-you-know-what quality about him and thinks he would make a bad boyfriend…it’s so easy to say something about someone else’s relationship…even though you may not know everything about what happend in the relationship in the first place…so with that being said I’ll just agree to disagree…
