Is there a way to be SURE she’s dead? According to what we see, she MIGHT have escaped?

I doubt it.
I don’t think we have any conclusive evidence she did die, but I think we can safely say she did.
I can see a sequel: “Finding Nemo 2 - Finding Coral”.
I think that she died, but Pixar was going for a G rating, so they didn’t show it. This is the same thing with Syndrome’s death. Nobody actually saw him get ground to bits, did they? I’m pretty sure that Coral, those 300+ eggs, and Syndrome all died, even though we did not see it.

There Is, a difference between both that of what you said about Coral and Syndrome.
For Syndrome, his death was conclusive. Meaning that there was obvious evidence that he did pass away.
But if you dont mind, I should say that not only did he blew up into bits. But before that, he got trapped into the running turbine on his Jet because of the cape he was wearing and got turned into ground meat before he burned to ashes.
But as for Coral, since there was No visual that we did see how she died and also because I Want to be truthful on this, her death still remains inconclusive. Plus, only because the movie was not made to show such a potential violent scene, we still do not even know for sure if the barracuda did eat her along with both her’s and Marlin’s over 300 newborns. But even then, Mr. Stanton did not allow Marlin to be conscious to see what the barracuda did after it had knocked him away.
From all this, Coral’s part remains a mystery.
I’m sure Coral’s dead- seems like too much of a twist if she weren’t. 
I think she did die. You would have to explain the missing fish eggs as well. And if she was alive, then she and Marlin would be a happy family raising Nemo.
i’m thinking that she died. Because I figure if she and the other eggs were still alive, wouldnt she have come back? Or maybe heard about Marlin’s search for Nemo and tried to find them?
Well, who knows what she’s been through? She could very easily get lost, believing her husband and eggs died, just as Marlin did not search for her. Would be ironic if she was left with one egg as well lol.
Anyways, all I am saying is… We don’t have a proof that she’s dead.
Well, if she was alive and been missing for years, you would think that she would at least try to get back to Marlin.
But perhaps she was certain he was dead, just as he didn’t start looking for her.
Actually, she could have survived. I’m not 100% sure, though. But one thing I realize is that there is no mention of Coral’s “death” anywhere on the Pixar web site. They even have a whole page for Coral, but there is no mention of her “death”.
But then again, if Coral had survived, wouldn’t she come back home? Unless she did tr to go back home, but Marlin was gone searching for Nemo, so she didn’t know what to do, so she left?

Since we are talking about Nemo’s mom, don’t you guys think that if she was alive, she would’ve saved a small portion of her eggs?
Good question. I don’t think so, since she was in quite a bit of trouble already.
She dove down to save them in the begining of the movie though.
