I mean sure he gave the restraunt a good review, but he’s a food critic, not the health inspector…
I mean, no’one else was in the restraunt, so technically no’one should know about them showing him the rat, right?
I think in the food competition that exists in Paris, it doesn’t really matter. Bottom line is you just gave a restaurant that had rats a great review. And that’s just unacceptable. You have to be like a god, I think - knowing everything that’s going on inside of a restaurant just by having one meal there. Probably why they give negative reviews so much!

Secondly, I agree with what Gasduude said. To quote Remy:

Have little know-how on how to make those blank box things, but any…oh there it is Spoil ok…but I’ll try not to.
The reason for it happening may have been because he himself wanted to quit such a job after coming to the realization that he had been credited with “ruining businesses” with what he does. And eversince the end of the movie, he had learned that even the simplist portion can be excellent.
[spoil]I think the epilogue took place some time later than the rest of the movie. After all, it takes a little while after shutting down one restaurant to start another one and get it up and running like it was shown at the end. So Ego probably didn’t lose his job right away. I think the key word in Mitch’s quote is “credibility.” Once it was announced that Ego gave a great review for a restaurant infested with rats, people lost a lot of trust in him as a food critic. His popularity continually decreased; and if nobody listens to a critic, why should he be paid? It’s kind of an ironic twist how Ego ended up suffering the same fate that he’d given restaurants for years. He lost his job because people doubted his quality, just like Gusteaus.
My main question, though: How did Linguini’s new restaurant become so popular? After all, if one business was shut down because of rats, why would people flock to a new restaurant run by the same people?[/spoil]
[spoil] Health Inspectors care about rats in the resturant…people who love good food do not…well…mostly overlook it.
Mostly, Linguini became a famous chef (even though he isn’t one) in the public, and the food made was perfection. Not to mention, Gusteau’s resturant has been around for a long time, so much to get five stars. It’s seemingly natural that a place that’s been around for a long time would attract rats and the like in.
The new La Ratatouille keeps itself up due to the famous Guesteau son, the great food, and he fact it’s a small bistro instead of a large resturant.[/spoil]
[spoil] Well actually, if one notices, Remy was ACTUALLY taught a bit by Collete. During the scene with which she “brings the law of the kitchen” to Linguini with Remy in his hat, you can see Remy mimicing, as Collete wants Linguini to, what Collete is doing.
Collete probably handles the work, while Remy gives on the instructions, and sometimes recipies. He does help out in the small tasks he’s able to, adding sauce and final touches, and takes pleasure in helping in such ways to add the subtle additions. [/spoil]
