I has meatloaf, mashed potatoes, carrots and aparahus for lunch.
For lunch I made green curry noodles and pad thai salad (lettuce, bean sprouts, and carrots with sweet lime-peanut dressing). I’m currently waiting for my cinnamon roll dough to rise. ![]()
Tomorrow I might be a bad girl and make maple-glazed yeast doughnuts (think Krispy Kreme) with homemade bacon bits. Ohhhh yeeeeeah! But I might do a half recipe so I don’t overdo the sweets.
I had some water because I was so thirsty.

I’m making poblano peppers stuffed spanish rice, veggies, and topped with cheesy sauce.
I might also whip up some homemade ranch later.
I might be making for dinner (with my mother), Ratatouille, Confit Byaldi style.
Ohhhhh, I’ve wanted to try that recipe so bad! But I need a mandolin first to thinly slice the veggies. It’s vegan, too, which makes it even more awesome (rubs fingers together while laughing maniacally).
I used to make it with my Mom much more often than I do now. I haven’t had it in about a year.
Had chicken sandwichs for dinner.
The Confit Byaldi Ratatouille tasted delicious.
