Pizza Planet Truck in The Incredibles!
Take a look at 3:54 (min:sec) into the Incredibles DVD. The yellow vehicle behind the cop looks like our truck. It might take the HD version to know for sure, but it looks a lot more probable than anything in the freeway scene near the end. By the by, this was a widescreen NTSC (USA) DVD.

No, sorry, that’s not the truck. Just a yellow car. And I’m pretty sure of his location. I’ll tell you where I think it is if nobody here wants to find it by himself.
The final box office tallies are in, and it turns out that “Cars”‘s actual weekend gross is $33.7 Million, about $2 Million higher than the estimate! Go “Cars”!

OK, so ; it’s towards the end of the movie, when the Incredibles are back in town. More precisely, it’s when the white and blue vehicle lands on the freeway.
Just before the impact between the van and the ground, you can see the rocket and the yellow roof of the Truck, on the bottom of the image, and going very quickly from left to right.
So, the Pizza Planet Truck doesn’t appears full, and it’s only on five or six frames. Moreover, it’s blurred (!)
I’m not absolutely sure it’s the Pizza Planet Truck, but we can clearly see something which looks like a white rocket on a yellow roof, and what else could it be ?
You’ll have to watch it frame by frame, otherwise it’s impossible to see.
I hope you’ll find it, and tell me if I’m right or wrong ^^
Nope, that’s not it. Just checked it frame-by-frame and zoomed specifically where you are talking baout. It’s just a sedan- not a truck with a camper and no rocket.
But that’s the biggest problem with the cars in The Incredibles, there are almost no pick up trucks in the film at all. Just a smattering of them and usually so blurry to the point of ruling out a positive ID.
