I found a reference in the Pixar short “Boundin'”!
Here’s where it is: the old tow truck that the guy with the razor drives to shear the sheep guy is also known as Mater from Cars! You don’t exactly see the eye windsield thing or the mouth. It’s only his back. Pretty cool, huh?

I viewed the short and I don’t recognize the vehicle as any of the characters we have seen in Cars.
*sigh* Ah, well. I couldn’t remember, because I don’t know where that Incredibles DVD is. 😛
Actually, if you buy or rent The Incredibles on DVD, you can get Boundin’ as an extra with commentary by Bud Luckey who wrote, directed, and did all the vocals. He says, “The Model T. Forge is from an upcoming movie called Cars.”
Hmm in that case bill, my suspicions are correct, the car is Lizzie played by Katherine Helmond, and she is a Ford Model T
